The Perfect Marriage of Sweet and Savory in a Ginger-Sesame Sheet Pan Meal

For a zingy, easy sheet pan meal, dress up fillets of Pacific halibut and green beans with fresh ginger, lots of garlic, and a sweet and savory maple-soy combo. 

You’ll need to give the green beans a 10-minute head start in the oven so that they have time to soften before you add the Pacific halibut to the sheet pan. Staggering the start times for the fish and veggies ensures that they’ll both be done at the same time so that you have a hot meal that’s ready to serve as soon as it’s out of the oven.

Try substituting Pacific cod in this sheet pan meal, or swapping out the green beans with another variety of vegetables, adjusting for time as needed.

Zingy Sheet Pan Dinner with Pacific Halibut with Green Beans

This sheet pan meal can be made in under half an hour from start to finish, but for even more flavorful fish, you can marinate the Pacific halibut for up to an hour prior to roasting.

Ingredients

  • 2 tablespoons neutral oil (canola, grapeseed, peanut)
  • 1 to 2 tablespoons maple syrup or honey
  • 1 to 2 tablespoons soy sauce
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, a mix of minced and thinly sliced
  • 1 tablespoon toasted sesame seeds
  • Pinch of red chili flakes
  • Freshly ground black pepper
  • 2 (6-ounce) Pacific halibut fillets
  • ½ pound green beans, trimmed
  • Half bunch of cilantro, roughly chopped

Instructions

1. Preheat oven to 400F. In small bowl, combine oil, maple/honey, soy sauce, ginger, garlic, sesame seeds, red chili flakes, and black pepper. Adjust seasoning to taste, adding more maple/honey or soy sauce if desired. Pat dry Pacific halibut fillets to remove excess moisture, then drizzle with enough ginger-soy mixture to coat both sides. Spread green beans into single layer on baking sheet and toss with remaining ginger-soy mixture. Place on center rack in oven and set timer for 10 minutes.

2. When timer goes off, add Pacific halibut fillets to sheet pan, pushing aside green beans to make space if needed. Set timer for 8 more minutes and return sheet pan to oven.

3. Check on doneness of fillets when timer goes off. Pacific halibut is done when it flakes easily with a fork, or registers at 130F at its thickest part. Allow the fish to cook for another minute or so if not quite done.

4. When cooked to your liking, transfer fish and veggies to a serving platter. Sprinkle with chopped cilantro and extra sesame seeds if desired. Serve while still warm.
