Easy Shrimp Boil Grill Packets With Boiled Baby Potatoes and Corn

A Shrimp Boil in a Packet

These easy shrimp grill packets draw inspiration from mid-Atlantic seafood boils, pairing the flavor of buttery, sweet sidestriped shrimp from Alaska with zesty Old Bay seasoning. The shrimp boil packets can be cooked directly on a grill for a festive cookout. Alternatively, the packets can be cooked indoors in an oven. 

Sidestriped shrimp are quite delicate, so rather than tossing them into a traditional boil, they’re steamed in a foil packet along with a few other classic boil components — sweet corn, potatoes, garlic. In order for all of the ingredients to be ready when you open up the foil packets, the potatoes and corn need to be boiled first until they’re barely fork tender (par-cooked). This ensures that they’ll be steamed through and juicy upon serving.

Easy Shrimp Boil Grill Packets With Boiled Baby Potatoes and Corn

Ingredients

  • 4 (8 oz.) packs sidestriped shrimp, peeled
  • 1 pound baby potatoes, halved
  • 2 ears of corn, cut into 2-inch rounds
  • 1 yellow onion, thickly sliced
  • 2 green bell peppers, cut into 2-inch pieces
  • 6 cloves garlic, minced
  • 4 tablespoons butter, melted
  • 1 teaspoon black pepper
  • 2 tablespoons Old Bay seasoning
  • 1 lemon, quartered
  • 1 cup parsley, finely chopped

Instructions

1. Preheat the grill/oven to 400F.

2. Meanwhile, bring 8 cups of water to a boil in a large stock pot. Add the potatoes and corn to boiling water and cook for about 9 to 10 minutes, until barely fork tender. Drain.

3. Tear out four large sheets of aluminum foil and set aside. In a large mixing bowl, combine potatoes, corn, shrimp, onion, bell peppers, and garlic. Add melted butter to the mixture and toss to evenly coat. Season with black pepper and Old Bay, and toss again until thoroughly combined. Divide the mixture evenly between the four foil sheets, adding the mixture to the center of the large sheets. Wrap the foil tightly around the mixture, sealing so there are no air pockets.

4. IF GRILLING: Place the foil packs directly on the grill grates and cook for 12 minutes with the lid closed, flipping halfway through.

5. IF BAKING: Place the foil packs on a baking sheet, then transfer to oven and cook for 12 minutes, flipping halfway through.

6. Carefully open the packets and squeeze lemon juice over the mixture, then garnish with chopped fresh parsley.
