A Low-Salt, High-Flavor Meal You Can Enjoy All Summer

This grilled salmon salad recipe brings light and bright flavors to complement the warmth of summer. Grilling salmon is a simple way to introduce flavor to your fish without adding extra seasonings that are often loaded with sodium, making this a great option for those who are watching their salt intake. This recipe grills both salmon and mango to add several layers of deliciously charred flavor to the salad, using just a touch of sea salt to enhance the overall flavors of the dish. 

Wild-caught salmon is one of the richest sources of omega-3 fatty acids, which help to support cardiovascular health, brain health and the immune system. Grilled fruit is a fun way to dress up a salad and introduce new textures and flavors to your dish. Plus, mango is an excellent source of vitamin C, potassium, and B vitamins, which perfectly complement the omega-3s in the fish.

Simple Summer Salad with Grilled Salmon and Mango

Ingredients

  • 1 (6 oz.) Coho Salmon or Sockeye Salmon Portion
  • 3 cups arugula
  • 1 mango, cut into strips
  • 3 tablespoons goat cheese
  • 2 tablespoons chopped almonds
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Sea salt and pepper, to taste

Instructions

1. Prepare a hot grill or grill pan (high heat). Make sure the grates are clean and lightly oiled.

2. Add mango strips to the grill and sear undisturbed for about 3 minutes on each side. Remove the mango and set aside.

3. Meanwhile, season salmon to taste, then coat both sides with oil. Carefully place salmon skin-side down onto grill and cook for about 2 to 3 minutes, or until fillet releases easily from the grates with the help of a fish spatula. Flip and grill remaining side for about 2 to 3 minutes depending on thickness of fillet, or until center of fillet is medium-rare. Transfer fillet to a plate and allow to rest.

4. Toss arugula with the olive oil and balsamic vinegar to coat, then arrange in a serving plate or bowl. Add goat cheese, almonds, and season to taste. Top with grilled mango and salmon. Enjoy immediately.
