Honey Miso Salmon

An Easy Sheet Pan Meal with Salmon and Snap Peas

This sheet pan salmon dinner, paired with quick-cooking vegetables, is elevated with an easy but umami-packed miso dressing. The salty-sweet dressing is punched up with fresh ginger and scallions for a flavor that complements a wide range of vegetables.

Ingredients and Substitutions for Honey Miso Salmon:

  • Honey: This is a key ingredient for the dressing. If you don't have honey, you can substitute maple syrup, but the flavor profile will be noticeably different. 
  • Miso paste: Red or brown miso are ideal, as these darker miso pastes have deep nutty, caramel flavors. Miso is a key ingredient in this recipe, so if you don't have any in your pantry, there isn't a good ingredient substitution. Explore other sauces for salmon. 
  • Rice vinegar or apple cider vinegar: These vinegars have a mellow acidity that give the honey miso dressing the right amount of zing. You can another type of light vinegar (white vinegar, sherry vinegar) but the acidity will be harsher. 
  • Ginger: Fresh ginger root adds a bit of spice to the dressing. You can add a pinch of ground ginger if you don't have fresh ginger. 
  • Scallions: The mild flavor of scallions adds aromatic depth to the dressing. Chives or shallots can be substituted. 
  • Roasted sesame oil: The nutty flavor of roasted sesame oil enhances the nutty flavors of miso. Extra-virgin olive oil or a neutral oil can be substituted. 
  • Mint: Fresh mint adds refreshing flavor to the sheet pan meal, and also visual interest. Omit if you don't have mint. 
  • Snap peas: If you can't find snap peas, swap them with asparagus or string beans.

What to Serve with Honey Miso Salmon

  • Steamed rice
  • Steamed edamame
  • 4 cups tender leafy greens

Can You Air Fry Honey Miso Salmon? 

Yes, honey miso salmon can be air fried:

  • Preheat air fryer to 400F.
  • Season salmon and vegetables with salt and pepper, then drizzle with oil.
  • Arrange fish and vegetables in an air fryer basket in single layer.
  • Air fry for 6 to 8 minutes until salmon fillets reach 120F at thickest part on an instant-read thermometer and vegetables are crisp-tender. 
  • Transfer salmon and vegetables to serving plate and drizzle with honey-miso dressing. Garnish with mint.

Sheet Pan Honey Miso Salmon

Ingredients

  • 4 (6 oz.) portions Sockeye Salmon or Coho Salmon
  • 2 tablespoons honey
  • 1 tablespoon red or brown miso
  • ¼ cup warm water
  • 1 tablespoon grapeseed oil, plus more for drizzling
  • Salt and freshly ground black pepper
  • 1 pound snap peas, trimmed
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 inch piece ginger, grated
  • 4 scallions, thinly sliced
  • 1 tablespoon roasted sesame oil, optional
  • ¼ cup fresh mint leaves
  • Steamed rice, for serving

Instructions

1. Preheat oven to 400 F.

2. Meanwhile, in a small pot heat honey and miso together over medium heat until mixture bubbles, deepens in color and thickens, about 5 minutes. Whisk in warm water. Transfer honey-miso dressing to a small bowl and set aside.

3. Pat salmon fillet dry with a tea towel or paper towel to remove excess moisture, then place skin side down on a baking sheet. Drizzle fillets with oil and season with salt and pepper. Roast for 6 minutes, or until the salmon just begins to turn opaque.

4. Remove baking sheet from oven, and add snap peas. Drizzle with oil then return baking sheet to oven for about 4 minutes or until salmon flakes easily with a fork, when the thickest part of the fillet registers at 120F for medium-rare doneness.

5. Whisk vinegar into the honey-miso mixture, then add in ginger, scallions and sesame oil. Spoon half the dressing over the salmon and snap peas while still warm.

6. Transfer salmon and vegetables to serving bowls atop steamed rice. Garnish with mint. Spoon remaining dressing generously over the top and enjoy while warm.
