Microwaved Creole Rockfish With Smoky Butter

A Southern-Inspired Rockfish Recipe

This southern-inspired meal is a fun and flavorful way to enjoy flaky fillets of rockfish. It's a rich meal that channels the regional taste and history of the Bayou in just under 20 minutes.

Creole rockfish feels like an indulgent meal, but it's quite easy to make — it's cooked with a microwave, for a surprisingly convenient preparation method. The beautiful red coating of melted butter, infused with a smoky chili powder blend, is brushed liberally over the rockfish before cooking, helping the fish to stay moist as it cooks.

Notes on Steaming Fish in the Microwave: 

  • If you're concerned about leaving a fish scent in the microwave, keep a mug of water with a tablespoon of vinegar or lemon juice in the microwave for the duration of cooking the fish.

  • Make sure to set your microwave power to level 5, or just half the normal setting the microwave normally is set on. If the power level of your microwave isn’t adjustable, cook each step at shorter increments and check on doneness so you don't overcook the fish.

Microwave Creole Rockfish With Smoky Butter

Ingredients

  • 2 (6 to 8 oz.) portions rockfish
  • Salt and freshly ground black pepper
  • 2 tablespoons butter, melted
  • 1 teaspoon worcestershire sauce
  • ½ tablespoon brown sugar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ tablespoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon mustard (either the condiment or powder)
  • 2 teaspoons vinegary hot sauce
  • 1 teaspoon cayenne pepper (optional)

Instructions

1. Gently pat rockfish dry with a clean kitchen towel or paper towel. Season with salt and pepper. Set aside.

2. In a small mixing bowl, combine worcestershire sauce, brown sugar, onion powder, garlic powder, paprika, thyme, mustard, hot sauce, and cayenne (if using). Pour melted butter into the mixture, stirring to form a paste.

3. Place fish in a microwave safe platter or cooking vessel, then coat with smoky butter sauce until it's completely covered. Cover your fish with a sheet of parchment then plastic wrap to seal. Alternatively, cover the platter/vessel with your preferred microwave-safe lid, leaving some space for steam to escape.

4. Cook the creole rockfish for 2 minutes. Remove from the microwave, then carefully unseal the plastic wrap or remove lid to release some heat. Let fish rest for 2 to 3 minutes before serving.

5. Serve creole rockfish with fresh lemon wedges, smothered greens, and a freshly baked biscuit!
