An Easy Way to Bake Rockfish

As the most flavorful white fish in our lineup, rockfish pairs well with bold flavors. The easiest baked rockfish recipes include sauces or spices to dress the fish, which matches perfectly with the big flavor offered by this lean species of white fish. Our easy baked rockish recipe is a basic template for weeknight meal — simply add your favorite seasoning or sauce to the fish, then bake!

There are dozens of varieties of rockfish in Alaska, but generally home cooks will have access to two "types." Smaller species are typically referred to as "rockfish" whereas a larger variety like yelloweye rockfish is either referred to as its full name or simply as "yelloweye." The cooking method is similar across rockfish species, but larger varieties and thicker fillets will need more cook time overall. 

Simple Tips for Easy Baked Rockfish

  • Pat the rockfish fillet dry to remove excess moisture.

  • Dress fillets with sauces/spices before baking for maximum flavor.

  • Add oil to prevent sticking and enhance flavors.

How Long to Bake Rockfish

Depending on the cooking method and temperature of your oven, rockfish fillets can take between 10 to 12 minutes to bake. Rockfish fillets will be opaque and flake easily once they're cooked through. 

Easy Baked Rockfish Recipe

Gather your materials and ingredients: Your fillet(s), tea towel or paper towels, olive oil, sauces/spices, salt and pepper, baking sheet or dish

Preheat your oven to 400F. Meanwhile, pat rockfish fillets dry with a tea towel or paper towel. Season with salt and pepper and arrange in a single layer on a rimmed baking sheet or baking dish.

Lightly coat fillets with oil so that they don’t stick, then dress with any sauces or spices. Transfer to oven and set timer for 10 to 12 minutes, depending on thickness of fillets.

Pacific rockfish is done when fillet is opaque throughout and flaked easily with a fork. Add a couple more minutes of cook time as needed.

Ingredients

  • 1 (6 oz. to 8 oz.) portion rockfish or yelloweye rockfish
  • Extra-virgin olive oil
  • Salt and freshly ground pepper

Instructions

1. Preheat oven to 400F.

2. Meanwhile, pat rockfish fillets dry with a tea towel or paper towel. Season with salt and pepper and arrange in a single layer on a rimmed baking sheet or baking dish. Lightly coat fillets with oil so that they don’t stick, then dress with any sauces or spices.

3. Transfer to oven and set timer for 10 to 12 minutes, depending on thickness of fillets. Rockfish is medium-done when it has reached an internal temperature of 130F on an instant-read thermometer at its thickest part, or when it can be flaked easily with a fork. If not quite done, allow to cook for a couple minutes more.
