Grilled Pacific Halibut with Ginger-Sesame Marinade

An Easy Marinade, Full of Japanese-Inspired Flavor

The high heat of the grill brings this recipe for ginger-sesame marinated Pacific halibut to life. It’s a savory, Asian-inspired meal made from basic ingredients that are easy to assemble into a delicious marinade. In just 30 minutes, the fillets of Pacific halibut are perfectly marinated, juicy, and ready to toss onto a grill.

This simple marinade for halibut is a mixture of sesame oil, ginger, garlic, brown sugar, and mirin. Mirin is a sweetened Japanese cooking wine that you might not have in your kitchen. If you’re looking for a decent substitute, you can swap in dry sherry or white wine. They each have the acidity you need in the marinade, but you’ll have to add in a pinch of sugar to match the sweetness of mirin — about ½ teaspoon of sugar for every 1 tablespoon of wine/sherry.

Grilled Pacific Halibut with Ginger-Sesame Marinade

Ingredients

  • 2 (6-ounce) portions Pacific halibut
  • 5 tablespoons sesame oil, divided
  • 3 tablespoons mirin, divided
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 teaspoons salt, divided
  • 1 teaspoon brown sugar
  • ½ teaspoon black pepper
  • ½ cup scallions, sliced

Instructions

1. In a dish just large enough to accommodate fish, combine 2 tablespoons sesame oil, 2 tablespoons mirin, ginger, garlic, 1 teaspoon of salt, sugar, and pepper.

2. Pat halibut fillets dry with a clean kitchen towel or paper towel, then add to dish, turning to coat in ginger-sesame marinade. Refrigerate for 30 minutes.

3. Meanwhile, combine green onion, remaining 3 tablespoons sesame oil, remaining tablespoon of mirin, and remaining teaspoon salt. Set aside.

4. When ready to cook, heat grill or grill pan on medium-high heat until sizzling hot. Place marinated halibut on grill and sear undisturbed on each side until fillet releases easily with the help of a fish spatula, about 2 minutes per side. Turn off the heat and allow fish to cook until thickest part of the fillets register at 130F on an instant-read thermometer for medium-done fish, about 2 more minutes or until fish has reached desired doneness.

5. Transfer to serving platter. Spoon scallion sauce over halibut and serve immediately.
