One-Pan Mediterranean Bake with Spot Prawns, Tomatoes, and Feta

A Satisfying, Home-Cooked Meal Without All the Fuss

This one-pan spot prawn bake is full of robust, Mediterranean-inspired flavors that you can build from pantry staples and a few other ingredients you might have in your fridge right now. It’s perfect for weeknights when you’re craving a satisfying home-cooked meal, but don’t want to spend too much time prepping and cleaning up.

Onions, garlic, oregano, and thyme are the aromatic foundation of this bake, transforming a humble can of tomatoes into a simple but flavorful sauce.

You’ll start the sauce on the stovetop but finish it in the oven — where it will continue to bubble away, topped with spot prawns and salty-creamy crumbled feta cheese. The final flourish is plenty of fresh parsley for a bright, herbaceous hit and appealing contrast of colors. Alternatively, try using wild Alaska pollock quick cuts in this meal. 

The finished bake is wonderful with a side of crusty bread. Or, try spooning it as a sauce over orzo or your choice of whole grain.

One-Pan Mediterranean Bake with Spot Prawns, Tomatoes, and Feta

Ingredients

  • 1 (8 oz.) pack spot prawns, peeled
  • Extra-virgin olive oil
  • 1 small onion, diced
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 2 cloves garlic, minced
  • 1 (15-ounce) can diced tomatoes
  • Sea salt and freshly ground black pepper
  • 2 ounces feta, crumbled
  • Handful of parsley, roughly chopped

Instructions

1. Preheat oven to 400F. Meanwhile, heat olive oil over medium heat in an oven-safe pan. Add onions, oregano, and thyme. Cook until onions are translucent, about 8 minutes.

2. Add garlic to pan and cook until fragrant, about 1 minute, then add tomatoes and simmer for 5 minutes until slightly reduced. Season to taste with salt and pepper.

3. Arrange spot prawns in pan, nestling into sauce. Top with crumbled feta and an extra drizzle of olive oil, then transfer pan to oven and bake for 10 minutes, or until cheese is melted. Garnish generously with parsley and enjoy while warm.
