For a sweet and savory feast, make this recipe for grilled Weathervane scallops with a maple bourbon glaze. The maple bourbon glaze comes together with the addition of fresh orange and lime juice, plus citrus zest for a bright punch. It’s the perfect dish to serve with a fresh green salad.
The scallops are marinated in the maple bourbon mixture before being grilled so that they stay juicy. Then, the excess marinade is simmered in a saucepan until slightly thickened and glazy for serving. If you like you can omit the bourbon, but make sure you keep the orange and lime juice — the acidity of the citrus helps to balance the sweetness of the glaze, as well as the natural sweetness of Weathervane scallops.
How to Cook Scallops on the Grill
Cooking scallops on the grill is just as easy as pan-searing. Here are a few tips and tricks to that you can cook perfectly grilled weathervane scallops every time:

Whether you’re using a grill (gas or charcoal) or a cast-iron grill pan, make sure that the grill grates are hot, clean, and lightly oiled before putting scallops on them. This will help prevent sticking and allow the scallops to pick up nice grill marks.

Ingredients
- 1 (20 oz.) pack Weathervane scallops
- 2 cloves garlic, grated
- 1 orange, zested and juiced
- ½ lime, zested and juiced
- 2 tablespoons maple syrup
- 1 tablespoon bourbon
- 4 bamboo skewers, soaked in water
- Salt and freshly ground black pepper
Instructions
1. In a medium bowl combine garlic, orange juice & zest, lime juice & zest, maple syrup, and bourbon. Season scallops, then add to bowl. Toss in marinade and allow to marinate for 20 to 30 minutes.
2. Prepare a hot grill or grill pan over medium-high heat. Make sure the grates are clean and lightly oiled.
3. Reserve marinade, then thread scallops onto skewers — approximately 9 to 10 scallops per skewer. Set aside.
4. Meanwhile, take reserved marinade and place in a small pan over medium high-heat and reduce by half, approximately 2 minutes. Set aside.
5. Carefully lay skewers onto grill grates and cook undisturbed for 3 to 4 minutes. Flip and cook for an additional minute or until just cooked through.
6. Transfer to serving platter and pour maple-bourbon sauce over grilled scallops. Serve immediately.
