Crispy Crab Roll Sushi Bake With Dungeness Crab

A Weeknight Sushi Bake or Perfect Party Dish

This quick and comforting sushi bake is inspired by crispy crab rolls — but it's perfect for a weeknight meal with family or a festive gathering. Sweet, salty Dungeness crab meat is folded into a creamy mayo mixture, then layered over seasonsed sushi rice to create a casserole-style meal.

Simply heat up the dish in an oven for the flavors to meld, then top with toasted panko for crunch and ripe avocado. Serve this crab sushi bake while warm with roasted seaweed for DIY hand rolls. Or, treat it like a rice bowl — dig in with a spoon and enjoy.

Crispy Crab Roll Sushi Bake With Dungeness Crab

Ingredients

  • 4 (6 oz.) packs Dungeness crab meat
  • 8 oz. cream cheese, softened
  • ¼ cup plain or spicy mayo
  • 3 to 4 cups freshly cooked short-grain or medium-grain rice (sushi rice)
  • 3 tablespoons rice wine vinegar
  • 1 tablespoon sugar
  • 1 ½ teaspoons salt
  • 2 tablespoon extra virgin olive oil or butter
  • ⅓ cup panko breadcrumbs, regular or gluten-free
  • Sesame seeds (optional)
  • Ripe avocado, sliced
  • Chili sauce (optional)
  • Roasted seaweed, for serving (optional)

Instructions

1. Preheat oven to 375°F.

2. In a medium mixing bowl, stir together cream cheese with mayo until combined. Mixture does not need to be smooth. Fold in crab, mixing until evenly distributed. Set aside.

3. Season cooked rice with vinegar, sugar, and salt, stirring to combine. Then, layer rice into a large baking dish or pan (approx 1.5 to 2 quarts). The layer should be about ¾- inch to an inch thick.

4. Sprinkle the rice with sesame seeds (if using), then spoon the crab mixture on top, spreading in an even layer. Transfer to oven and bake for 10 minutes.

5. Meanwhile, heat up oil or butter in a medium skillet over medium heat. Add in breadcrumbs and toast until golden, about 5 minutes. Transfer breadcrumbs to a bowl and set aside.

6. Remove baking dish from oven and top the sushi bake with avocado slices. Garnish with chili sauce and more sesame seeds, if using. Scatter breadcrumbs across the top to finish. Serve with roasted seaweed, if desired, or enjoy with a spoon.
