Crispy Air Fryer Pacific Halibut Cheeks with Katsu Sauce

A Crunchy, Golden Comfort Food Classic

This easy recipe for crispy air fryer Pacific halibut cheeks encrusts tender, delicate cuts of fish in golden panko breadcrumbs for a fast, fun, and delicious meal. Because Pacific halibut cheeks are round and flat, they cook much like a breaded cutlet of protein — quickly and evenly, especially in an air fryer. Or, try making a pan-fried version of this recipe for crispy Pacific halibut cheeks. 

Serve these golden, crunchy air fryer Pacific halibut cheeks with a wedge of lemon and fresh cabbage slaw. Or, mix together a few easily accessible ingredients from your refrigerator and pantry to make a tangy katsu sauce that gives this meal a Japanese-inspired spin.

Crispy Air Fryer Pacific Halibut Cheeks with Katsu Sauce

Ingredients

  • Extra-virgin olive oil
  • 1 ½ to 2 cups plain panko breadcrumbs
  • ½ cup flour
  • 1 egg
  • 1 (12-ounce) pack Pacific Halibut Cheeks
  • Salt and freshly ground black pepper
  • Ketchup
  • Soy sauce
  • Worcestershire sauce
  • 2 cups cabbage, shredded
  • Ginger-miso dressing, or something similar

Instructions

1. Preheat an air fryer to 400F.

2. Meanwhile, heat a skillet over medium heat, then add in breadcrumbs and enough oil to lightly coat. Stir occasionally and toast until golden, about 5 minutes. Set aside.

3. Set up your dredging station in three dishes: add flour to one, whisk egg in another, and toasted breadcrumbs in the last dish.

4. Pat halibut cheeks dry with a tea towel or paper towel, then season with salt and pepper. Dip each piece into flour, egg, then breadcrumbs, coating both sides. Set breaded halibut cheeks aside.

5. Drizzle halibut cheeks with oil (or spray with cooking spray), then place into air fryer basket. Cook for 6 minutes total flipping halfway through, or until opaque through center of fish.

6. In a small mixing bowl, combine enough ketchup for dipping with a couple dashes of worcestershire sauce and a splash of soy sauce. Adjust to taste, then serve alongside halibut cheeks with cabbage slaw tossed in your choice of salad dressing.
