A Bubbling Dish of Alaskan Crab and Barnacle Foods Kelp Pickles

Cheesy Baked Crab and Kelp Pickle Dip is a bubbling, indulgent dish to share with friends. This dip is a delicious celebration of sustainable Alaskan harvests, featuring an over-the-top combination of sweet Dungeness crab and tangy Barnacle Foods Kelp Pickles. The Alaskan crab and kelp are baked together into a hot, cheesy mess, setting you up for the ultimate cheese pulls.

Barnacle Foods Kelp Pickles are made with sliced bullwhip kelp sourced from abundant kelp beds off the coast of Juneau, Alaska. Bullwhip kelp is known for its intensely savory flavor and snappy bite, which melts perfectly into the richness of the dip. This variety of kelp is also the umami-packed ingredient in Barnacle Foods’ Kelp Chili Crisp, which we absolutely loved as a spicy-savory pairing in our recipe for Weathervane Scallops in Chili Crisp Butter Sauce.

While any type of Alaskan crab can be used in this Cheesy Baked Crab and Kelp Pickle Dip, we like the briny, clean flavor and substantial texture of Dungeness crab. Enjoy making this recipe with Snap & Eat Dungeness Crab and save a crab claw as garnish to finish the dish. Or try our hand-picked packs of Dungeness crab meat to help cut down on prep time. Both offerings are already cooked, so they simply need to be thawed before you integrate them into the recipe.

Cheesy Baked Crab and Kelp Pickle Dip

Ingredients

  • 1 (32 oz.) pack Snap & Eat Dungeness Crab, picked, or 2 (6 oz.) packs Dungeness Crab Meat
  • 6 oz. cream cheese, softened
  • 3 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 3 teaspoons Old Bay seasoning
  • ½ cup. Barnacle Foods Kelp Pickles, chopped
  • 2 lemons, zested, wedges reserved for serving
  • 6 scallions, sliced, greens and whites separated
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded mozzarella cheese
  • Freshly ground black pepper

Instructions

1. Set a rack in the lower part of your oven, and a separate rack 4 to 6 inches from your oven’s broiler element. Preheat oven to 375F.

2. In a medium bowl, combine cream cheese, mayonnaise, sour cream, Old Bay, Kelp Pickles and lemon zest. Add white parts of the sliced scallions into the bowl. Stir into a soft, smooth mixture.

3. In a small bowl, combine mozzarella and Monterey Jack cheese. Add a third of the shredded cheeses to the cream cheese mixture, stirring together until just combined. Set aside remaining two-thirds of the cheese mixture.

4. Gently fold crab meat into the cream cheese mixture, then spoon the mixture into a small baking dish. Spread into an even layer. Sprinkle the remaining shredded cheeses and green onions over the top, reserving some green onions for garnish. Season generously with black pepper.

5. Transfer dish to the lower rack of your oven and bake for 20 to 25 minutes, until the cheese is melted, bubbling, and starting to brown. Optional: For an especially browned finish, carefully move the crab dip to the top rack of your oven, then broil on high for 1 to 2 minutes until it is done to your liking. Keep a close eye on the dish as it broils to avoid burning.

6. Carefully remove the dip from the oven and top with more freshly cracked black pepper. Serve immediately with your favorite toast or crackers, kelp pickles, lemon wedges, and extra sprinkling of green onions.
