A Heart-Healthy Salmon Recipe with Classic Deli Flavors

This easy salmon recipe generously encrusts a fillet of salmon with a zippy layer of everything bagel seasoning. Paired with a lemony arugula salad (instead of a bagel!), it’s a low-carb, heart-healthy play on a classic deli combo that you can enjoy any time of day. 

Salmon is an amazing source of heart and brain-healthy omega-3 fatty acids. In addition, it’s rich in vitamin B12 — a key nutrient for energy production, the body’s waste removal processes, and brain health. Arugula is rich in dietary nitrates, which help boost the body’s natural nitric oxide production. Nitric oxide helps relax blood vessels and improve blood flow throughout the cardiovascular system. Heart healthy, indeed.

Baked Salmon with Everything Spice Crust

Ingredients

  • 1 (6-ounce) portion Sockeye Salmon or Coho Salmon
  • 2 tablespoons everything bagel seasoning
  • Extra-virgin olive oil
  • Salt
  • 2 cups arugula
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon dijon mustard
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Squeeze of lemon juice

Instructions

1. Preheat oven to 375F.

2. Pat salmon dry with a clean kitchen towel or paper towel to remove excess moisture. Then, coat fillet with olive oil and place skin-side down onto rimmed baking sheet. Generously sprinkle top with everything bagel seasoning to create a crust. Bake for 10 to 12 minutes. Salmon is medium-rare when it has reached an internal temperature of 120F on an instant-read thermometer at its thickest part, or when it flakes easily with a fork. Add a couple more minutes of cook time until salmon has reached desired doneness.

3. Meanwhile, combine 2 tablespoons olive oil with apple cider vinegar, mustard, salt and pepper in a medium bowl and whisk until combined. Add a squeeze of lemon juice to taste. Add arugula and toss to coat with desired amount of dressing. Extra dressing can be stored in the refrigerator for up to a week.

4. Serve salmon alongside dressed salad and enjoy immediately.


Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of food-borne illness, especially if you have a certain medical condition. The FDA recommends an internal temperature of 145°F for cooked fish.
