This sheet pan meal pairs buttery, flaky sablefish with quick-cooking vegetables for a balanced dinner. Thinly sliced zucchini and sweet cherry tomatoes get a head start in the oven so that they get soft and juicy. Then, the sheet pan is loaded up with corn and the sablefish fillets.
When everything comes out of the oven, the fillets get topped with a zesty lemon herb dressing that adds a burst of flavor. The combination of the fresh veggies, starchy corn and protein packed sablefish make for a nutritious and tasty meal, all ready in under 30 minutes.
Note: Canned or frozen corn makes this meal super simple, but sub in fresh kernels when it’s in season. If you’re using fresh or frozen corn, add it to the sheet pan along with the other vegetables.
