Air Fryer Rockfish With Easy Curry Mayo

An Easy Curry Mayo Brings Serious Punch to This Quick Recipe

For an air fryer fish recipe that comes to the rescue when you need a healthy meal, fast, bookmark our recipe for air fryer rockfish with an easy curry mayo. Using just a couple of high-impact pantry staples and your trusty air fryer, this recipe takes Pacific rockfish fillets from your freezer or fridge to tender and tasty in under 15 minutes. 

This rockfish recipe is dressed up with the bold flavor of an easy curry mayonnaise, made by mixing mayo with whatever curry powder you have in your pantry. As the rockfish air fries, the curry mayo bastes the fish in flavor and a little fat, keeping the fillets moist so that they’re perfectly flaky. The mayo also caramelizes beautifully, so you’ll have a gorgeously golden air fried fish fillet by the time the rockfish is cooked through. From there, it's ready to be flaked over your choice of accompaniment: a bowl of veggies, hearty salad greens, rice, or noodles.

A Note on Cooking Rockfish from Frozen

Not every cut of fish is ideal for cooking from frozen, as thicker cuts of any type of species won’t cook evenly. The challenge when cooking fish from frozen is getting the center to defrost and cook through without overcooking the exterior of the fillet. 

You won't have this issue when cooking with rockfish fillets. They're thin enough that they cook perfectly from frozen, making these a great go-to species for healthy, impromptu meals. Air Fryer Rockfish From Frozen or Defrosted

This quick recipe can be made with either frozen of defrosted rockfish fillets. All you have to do is adjust the cook time accordingly.

Ingredients

  • 1 (6 to 8 oz.) portion rockfish
  • 1 tablespoon mayo
  • Curry powder, to taste
  • Sea salt and freshly ground black pepper
  • Cooking spray or olive oil
  • Slice of lemon or lime, optional

Instructions

1. Preheat air fryer to 400F. Meanwhile, prep your fish. If cooking from frozen, remove rockfish from packaging and rinse fillets under cold running water until thawed enough to separate. Pat dry. If cooking defrosted fillets, simply pat dry.

2. In a small bowl, mix together mayo with a ½ teaspoon of curry powder to make curry mayo. Season to taste with salt and black pepper. Add more curry powder until boldly flavored.

3. Distribute curry mayo generously over one side of each rockfish fillet. Spritz air fryer basket with cooking spray (or lightly coat the bare side of fillets with a little olive oil), then place rockfish fillets mayo side up into the basket. Set timer for 4 to 6 minutes and cook until tops have browned and rockfish flakes easily. Flake it over veggies, steamed rice, or noodles and serve with a wedge of lemon or lime, if desired.


Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of food-borne illness, especially if you have a certain medical condition. The FDA recommends an internal temperature of 145°F for cooked fish.
