Sheet Pan Salmon with Sweet Mustard Glaze and Garlicky Vegetables

A Flavor Profile Match-Made in Heaven

Mustard and salmon are an iconic duo in the kitchen, bringing out the best qualities in one another to create an effortless, can’t-go-wrong seafood meal in a matter of minutes. Adding in a spoonful of jarred fruit preserves takes things over the top to create a glazy sauce for the fish. It's an easy dish made from a few pantry staples that feels much more elegant than the sum of its parts. Baking the fish alongside a flavorful vegetable like broccolini or asparagus makes this an easy sheet pan meal to add to your recipe rotation.

Try using preserves made from blackberry, lingonberry, or raspberry for a nice balance of flavors. You can choose to cook with any variety of wild-caught salmon. Sockeye’s gamey flavor works particularly well with mustard, while the sweetness of the preserves can complement the delicate taste of king or coho.

Sheet Pan Salmon with Sweet Mustard Glaze and Garlicky Vegetables

Ingredients

  • 4 (6 oz.) portions coho salmon, sockeye salmon, or king salmon
  • 1 ½ tablespoon dijon mustard
  • 1 tablespoon whole grain mustard
  • 2 teaspoon garlic, minced
  • A mix of minced, fresh herbs like dill, tarragon, or thyme
  • Tart fruit preserves (blackberry, lingonberry, cranberry, etc.), to taste
  • ½ pound broccolini or asparagus
  • Salt and ground black pepper
  • Extra-virgin olive oil

Instructions

1. Preheat to 375F. Meanwhile, combine mustards, garlic, preserves, and herbs in a small bowl. Taste and adjust by adding more preserves if desired, then set aside.

2. Pat fillets dry with a clean kitchen towel or paper towel, then evenly arrange fillets into baking dish or sheet pan skin side down. Arrange broccolini alongside fish. Lightly season everything with salt and pepper, then drizzle with olive oil to coat.

3. Spoon mustard mixture onto each fillet of fish, spreading on top as well as the sides. Allow fillets to marinate for 10 minutes while oven preheats.

4. Place baking dish or sheet pan in oven and set timer for 8 to 10 minutes, depending on thickness of fillet. Salmon is done when it flakes easily with a fork or reaches an internal temperature of 120F on an instant-read thermometer. Allow to cook for a few minutes more to desired doneness, if needed.

5. Enjoy immediately, or at room temperature if desired.


Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of food-borne illness, especially if you have a certain medical condition. The FDA recommends an internal temperature of 145°F for cooked fish.
