Pacific Halibut Sheet Pan Meal with Crispy Smashed Potatoes

Fish and Vegetables with Tons of Texture

This Pacific halibut sheet pan recipe is a golden upgrade to your basic weeknight meal of fish and vegetables. The key is an easy two-step cooking process that produces crispy smashed potatoes — a delicious complement to perfectly baked fillets of Pacific halibut. A serving of garlicky green beans rounds out the meal with color and snap.

 Substitutions Ideas:

  • Potatoes: Try substituting sweet potatoes. Simply cut the sweet potatoes into 2-inch chunks (about the size of small potatoes) before boiling. You may need to extend baking time of the sweet potatoes by up to 10 minutes for optimal crispness. Note: Keep bake time for fish as 8 to 10 minutes though!

  • Green beans: You can substitute quick-cooking vegetables like asparagus, snow peas, or sliced zucchini. 

  • Herbs: Consider tossing potatoes and vegetables with any fresh or dried herbs before baking to add a different layer of flavor to the meal.

Pacific Halibut Sheet Pan Meal with Crispy Smashed Potatoes

Ingredients

  • 2 (6 oz.) portions Pacific halibut
  • 2 cups green beans, trimmed
  • 1 pound small potatoes
  • Extra-virgin olive oil
  • 2 tablespoons garlic, minced
  • Salt and freshly ground black pepper

Instructions

1. Preheat oven to 400F. Meanwhile, bring a medium pot of salted water to a boil. Add potatoes and cook until just tender enough to be pierced with a fork, about 15 minutes.

2. Drain potatoes and transfer to a baking sheet. Using a fork or the flat bottom of a mug, smash potatoes to flatten to approximately ½-inch thickness.

3. Add green beans to baking sheet, moving potatoes aside as needed so that all vegetables are in a single layer. Sprinkle green beans with garlic. Generously drizzle potatoes and green beans with oil, then season with salt and pepper. Bake for 10 minutes.

4. Season halibut fillets with salt and pepper, then drizzle both sides with olive oil. Add to baking sheet and cook for 8 to 10 minutes, depending on thickness of fillets. Pacific halibut is medium-done when it has reached an internal temperature of 130F on an instant-read thermometer at its thickest part, or when it can be flaked easily with a fork. If not quite done, allow to cook for a couple minutes more.

5. Transfer to serving plates and enjoy immediately.


Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs may increase your risk of food-borne illness, especially if you have a certain medical condition. The FDA recommends an internal temperature of 145°F for cooked fish.
