Grilled Wild Alaska Pollock Skewers with Maple-Sriracha Glaze

Ingredients
- 2 (6 oz.) packs of wild Alaska pollock Quick Cuts, thawed
- 3 tablespoons pure maple syrup
- 3 tablespoons Tamari (or soy sauce)
- 1 tablespoons sriracha hot sauce
- 1 clove garlic, smashed
- 2 tablespoons olive oil
- 1 red onion
Instructions
1. Combine maple syrup, soy sauce, sriracha and garlic in a small bowl. Pour into a gallon sized resealable bag and add the bite size pieces of wild Alaska pollock.
2. Peel the red onion and slice lengthwise in half. Cut into wedges about 1½ inches in size.
3. Marinate the fish and onion, turning once in a while, for 20 to 60 minutes.
4. Preheat a grill pan on medium heat.
5. Meanwhile, carefully place 4-5 pieces of marinated wild Alaska pollock on each skewer and brush each skewer with olive oil.
6. Place the skewers on the hot grill and brush one side with glaze.
7. Turn the skewers and brush again with sauce.
8. Continue brushing sauce on the fish, while turning each piece to create a nice glaze on the fish. Cook like this for about 10 minutes.
9. Serve hot with steamed rice. Garnish with green onions.
