Greek-Style Grilled Salmon Burgers with Feta, Olive, Tomato Topping

Mediterranean-Inspired Grilled Sockeye Burgers

This Greek-inspired salmon burger marries together the salty-briny flavors and fresh crunch of a Greek salad with meaty sockeye salmon. It’s a delicious combination that will give your next cookout some Mediterranean flair — the perfect flavor profile for summer.

Spoon the Greek topping generously on top of grilled sockeye salmon burgers just before serving. You might also enjoy serving the topping as a condiment for any type of fish coming off the grill, as a fresh complement to the charred flavor of grilled seafood.

Grilled Sockeye Burgers with Feta, Olive, Tomato Topping

Ingredients

  • 4 (5 oz.) sockeye salmon burger patties
  • ½ cup cherry tomatoes, diced
  • ½ cup cucumber, diced
  • 1 small shallot, finely chopped
  • ¼ cup Kalamata olives, chopped
  • ¼ cup feta, crumbled
  • 2 tablespoons extra-virgin olive oil
  • 2 teaspoons sherry vinegar
  • 1 teaspoon fresh dill, roughly chopped
  • ¼ teaspoon sugar
  • Salt and pepper

Instructions

1. IF GRILLING: Prepare a hot grill (medium-high heat). Make sure the grates are clean and lightly oiled. Place thawed or frozen salmon burger patty on grill and let cook, undisturbed, on direct heat for 2 to 5 minutes. Flip and cook an additional 2 to 5 minutes or until cooked through. Pro tip: If you like your burgers with more charring, add directly on top of flame. If you like your burgers with less charring, add towards outside of the grill for indirect heat.

2. IF PAN-FRYING: Heat large skillet over medium-high heat, then add just enough oil to cover bottom of pan. When oil is sizzling hot, arrange thawed or frozen patties in a single layer. Reduce heat to medium and cook for 4 to 6 minutes. Flip and cook for an additional 4 to 6 minutes.

3. Combine cherry tomatoes, cucumber, shallot, olives, feta, olive oil, vinegar, dill, and sugar. Season to taste with salt and pepper.

4. Generously spoon Greek salad on top of salmon burgers for serving.
